Granola

This is a really great granola recipe. It's good just plain for a small snack. It's super yummy with vanilla yogurt and fresh strawberries or blueberries. And lately I have been having it for breakfast with some milk and honey.



3 cups old fashioned oats
1 cup shredded, unpeeled apple
1/2 cup wheat germ
1/4 cup honey
1/4 cup water
1 tsp cinnamon
1 tsp vanilla

In a large bowl combine oats, apple and wheat germ; mix well.

In a small saucepan stir together honey, water and cinnamon. Heat to boiling, remove. Stir in vanilla. Pour over oat mixture and mix well.

Spray baking pan with nonstick spray. Spread oat mixture evenly in pan. Bake at 325 degrees for 45 minutes or until golden brown, stirring occasionally. Spread on to foil to cool. Store in airtight container in refrigerator up to 2 weeks.



I haven't had all the ingredients lately and I am too lazy sometimes to mess with the apple... so I have just been making it with the oats, honey, cinnamon, vanilla and water. The last time I made it I added some crushed pecans and that turned out yummy. Just experiment with adding different things. And even though the directions say bake for 45 minutes it's only been taking about 30 minutes for mine to finish. Be careful not to burn it! It doesn't taste so good when you do. (Yes. I know from experience.)
